Bring the tropics to the table with sweet papaya, creamy coconut and juicy pineapple. Like a vacation in your mouth, this healthy and refreshing fruit salad is sure to be a crowd pleaser!

Tropical Coconut Fruit Salad

Ingredients:

1 papaya, peeled and cut into ¾-inch cubes
(about 5 cups)
2 mangoes, peeled and cut into ¾-inch
cubes (about 2 ½ cups)
1 fresh pineapple, peeled and cut into ¾-inch
cubes (about 4 cups), reserving the juice
2 large bananas, peeled and cut into ¾-inch
cubes (about 2 cups)
¼ cup fresh grated coconut, for garnish

Directions:

  • Combine the papaya, mangoes and pineapple in a large bowl and add the juice from the pineapple.
  • Cover and refrigerate until chilled.
  • Just before serving, add the bananas and garnish with fresh coconut.
