OUTSIDE-IN BACON CHEESEBURGERS - Makes 4 servings
Prep Time: 20 minutes
Cook Time: 8 minutes
Total Time: 28 minutes

Ingredients:
1 pound ground beef
1 cup shredded sharp Cheddar cheese
1/2 cup chopped onion
8 slices bacon, cooked crisp, crumbled
4 Cobblestone Mill Onion Rolls
4 lettuce leaves
4 slices tomato

Preparation:
•Preheat gas grill to medium heat. Combine ground beef, cheese, onion and bacon in large bowl, mixing lightly but thoroughly. Shape into four 1/2-inch-thick patties.
•Place patties and rolls on grill grid; do not separate rolls. Grill rolls, wrapped in foil, 2 to 3 minutes. Grill patties, covered, 7 to 8 minutes to medium doneness (160˚F), turning occasionally.
•Place lettuce leaf on each roll bottom. Top with burger and tomato slice. Close sandwiches.

Cook's Notes/Tailgating Tactics: Prepare patties. Wrap individually in plastic wrap and place in zip-top plastic food bag. Refrigerate until ready to transport. Place patties in cooler; grill at tailgating site.

For charcoal grilling, place patties on grid over medium coals. Grill, uncovered, 11 to 13 minutes to medium doneness (160˚F), turning occasionally. Grill rolls, covered, 2 to 3 minutes while wrapped in foil. Serve as directed.

Timesaving Tips: Substitute 1 package (2.8 ounces) ready-to-serve bacon pieces for the cooked bacon slices. Purchase pre-shredded cheese.

MEATBALL HEROES - Servings: Makes 6

Ingredients:
1 pound lean ground beef
1/2 pound turkey sausage
3/4 cup fresh bread crumbs
1 egg
3 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped onion
1 jar (26 ounces) traditional-style spaghetti sauce
2 tablespoons balsamic vinegar
1 1/2 teaspoons dried Italian seasoning
6 Cobblestone Mill White Sub Rolls, warmed and split
1 cup (4 ounces) shredded Monterey Jack cheese

Preparation:
•Combine beef, sausage, bread crumbs, egg, garlic, salt and pepper in large bowl. Shape into 18 meatballs.
•Cook meatballs in 12” skillet over medium heat until browned on all sides, about 8 minutes. Remove from skillet; keep warm.
•Add onion to skillet; cook and stir until tender, about 3 minutes.
•Stir in spaghetti sauce, vinegar and seasoning; bring to a boil.
•Stir in meatballs; reduce heat to low. Cover and simmer, stirring occasionally, 20 to 25 minutes or until meatballs are no longer pink in centers.
•Place 3 meatballs on each sub roll. Spoon sauce evenly over meatballs; sprinkle with cheese.

GRILLED CHICKEN WITH FRUIT SALSA - Servings: Serves 4

Ingredients:
2 kiwi peeled and cut into ¼ inch thick pieces
1 cup strawberries, quartered
1 cup mango, chopped
1 teaspoon fresh cilantro, chopped
2 tablespoons purple onions, finely chopped
1 tablespoon olive oil
2 tablespoons raspberry vinegar
¼ teaspoon black pepper
4 boneless, skinless chicken breasts - season with salt and pepper to taste
4 Cobblestone Mill Seeded Sandwich Buns
4 leaves Bibb lettuce

Preparation:
•Toss kiwi, strawberries and mango with cilantro in a mixing bowl.
•Set aside.
•In a small skillet or saucepan, heat olive oil over medium heat.
•Stir in onions and saute' until soft. Do not Brown
•Stir in vinegar and pepper; increase temperature and bring mixture to a boil.
•Remove from heat and drizzle hot dressing over fruit.
•Toss to mix well.
•Set fruit salsa mixture aside and marinate at room temperature for 1-2 hours.
•Grill chicken until cooked through, approximately 4-5 minutes per side.
•(Cooking time will vary depending on size of breasts.)
•Place one Bibb lettuce leaf on bottom of bun.
•Top with chicken.
•Spoon salsa over chicken.
•Finish with bun top.
