Bruce's Sweet Potato Casserole with Pecan Crumb Topping
Yield: 7 (5 oz) servings
Prep time: 15 minutes
Cook time: 35 to 45 minutes
Ingredients
• 1/4 cup Evaporated Milk
• 1 tsp Vanilla Extract
• 2 Eggs
• 3 tbsp Melted Butter
• 1 29 oz can Bruce's Sweet Potato Casserole with (4 oz) can Pecan Crumb Topping
• 4 tbsp Softened Butter
Optional:
Cooked apple pieces or pineapple tidbits may be added to sweet potato mixture if so desired. Marshmallows may be placed on the pecan topping during the lat 10 minutes of baking time or until melted down. Pineapple rings and or cherries may also be added during the last 10 minutes of baking time.
Directions
1. Preheat oven to 350 F.
2. Grease baking dish. Combine milk, vanilla, eggs, melted butter and Bruce's Sweet Potato Casserole; blending well.
3. The size of the baking dish will affect the depth of the casserole. An 8”x9” dish will result in an approximate thickness of 1-1/2” whereas a 9” x 13” dish will result in a 1” thickness. Thickness will effect optimal baking time slightly as well as the moisture content of the casserole.
4. Follow directions when preparing and adding pecan topping to sweet potato mixture.
5. Bake for 35 minutes for 1” thickness and 45 minutes for 1-1/2” thickness.
6. Cover with aluminum foil in 275° - 300° oven to keep warm without additional browning on top.

Yummy Yam Cobbler
Yield: 1 2 1/2 quart casserole
Prep time: 15 minutes
Cook time: 1 hour
Ingredients
• 1 stick Butter
• 1 24 oz Can Bruce's Cut Yams, Diced
• 1 cup flour
• 1 cup sugar
• 1 tsp Baking Powder
Directions
1. Melt butter in 2 1/2 quart casserole in 350 degree oven.
2. Remove from oven and stir in diced yams, flour, sugar, and baking powder.
3. Return to oven and bake at 350 degrees for 1 hour.

Sweet Potato Pancake
Servings: 2 Pancakes 24 Pancakes
Pancake Mix: ½ cup 1.5 lbs
Water: 1/3 cup 3-1/2 cups
Directions
1. Preheat Griddle to 400°F
2. Blend together pancake mix and water using wire whisk. Mix just until all dry ingredients are wet. Do not over mix. For best results: Allow mixed product to stand for five minutes to rehydrate all ingredients before cooking.
3. Pour ¼ cup of batter (2 oz) on griddle for each 4 inch pancake.
4. Bake on hot griddle for 2 minutes on first side. Turn and bake on second side for 2 minutes.
